Back on Track with the Perfect Day

Yesterday was a successful blue dot day, filled with good food, and even sweets!

Here’s how it broke down:

Breakfast

Egg whites with salsa, corn, black beans, and Laughing Cow Creamy Swiss.

And coffee, of course, with sugar free pumpkin creamer.

It was a filling breakfast for only 3 points.

Lunch

Daily Harvest red lentil and cumin bowl, with eggs on top.

And some almonds and chocolate chips for an after lunch snack.

Dinner

Dinner was absolutely delicious.

Zucchini noodles topped with onions, cherry tomatoes, garlic, Parmesan cheese, and tofu. And a mixed green salad with fat free balsamic and kalamata olives.

I learned that I’m not a big fan of zucchini noodles, but I do love that this whole dinner was only three points!

Snacks

I had a few protein bars, and a microwave cookie for dinner. Such rewarding snacks.

I’m ok with snacks being a variety of chocolate and peanut butter goodness.

Summary

I am in the home stretch of my weight loss journey with only three more pounds to lose and I’m determined to lose them by the end of October. If I can keep up the blue dot days, like this one, I’ll reach my goal in no time!
