I don’t always have avocados in the house because, as everyone knows, they are very fickle.
Also, my love of avocados should be apparent from the name of this blog, but I think this is the first time I’m actually featuring the little magical food.
Either they aren’t ripe enough, or overripe, and if you buy too many at once you are guaranteed to throw at least one out.
I’ve found that three is the magic number when it comes to avocados in the house. When I have three, they all get eaten.
This week, as I’m getting back on track, I’m enjoying eggs and avocado for breakfast.
I love the combination of eggs and avocado. The creaminess of the avocado mimics that of cheese and it’s just as satisfying. Even though avocados are more points than cheese, the good fats and oils are worth it.
No joke, sometimes I’ll just gaze at this picture in fond remembrance of the perfect egg and avocado mix.
So damn tasty!
